Sure, it is always a good advice to make a backup before you make changes
to config files. However, the problem of the OP is not handling of config
files but the config file syntax.
@Svobi: I think it isn't possible to make a part of the OS list invisible.
And what would be the advantage of not showing some part of the OS list?
Maybe you should have a look at the password and security sections in the
grub manual:
