Back in my RedHat 7.2 days, I kept up-to-date on *all* the kernel
updates.
There was one particular kernel update that was applied to 2 identical
machines. One was "busier" than the other. What I soon noticed was
something
similar to your scenario, and the busier machine would last a shorter
amount
of time. After a few weeks, I started booting the n-1 kernel, and all
was
well again. Then when n+1 came out, I applied that, and never had
problems.
I'd check the files in /boot to see if a new kernel was automagically
installed
for you.
