I'm assuming that grub loaded fine without the change to fstab, since
grub doesn't use fstab.  fstab is only used after the Linux kernel
starts.

Grub doesn't even sign on?  That's rather strange.  I'd at least expect
some sort of display.  What specifically do you see when you try it?

You could also try booting the first CD in rescue mode.  Let the system
mount the existing system, then (assuming your RAID 5 shows up
as /dev/sda):

  # chroot /mnt/sysimage
  # grub-install /dev/sda
  # exit
  # exit

Pop out the CD and try to reboot.
