If you are the server administrator, you really need to get some books for reference. The sendmail book (AKA 'bat book ') by O 'Reilly is a great book for learning about sendmail. You can also look on the sendmail.org website for immediate answers for your questions.
You are getting relaying denied errors, because sendmail (on Red Hat) won 't allow you to pass mail through your server unless you explicitly allow certain names/IP addresses. Look at the /etc/mail/access file.
