use (depending on format...)
dvdrecord
or more likely
dvd+rw-tools (the growisofs tool does all this for you. but _do_ RTFM)

if you are a gui person. k3b will use the dvd+rw-tools packages
XCDRoast wants cdrecordProDvd (which is not open source, but is free for
personal use, once you 've registered it)
