This really should be addressed to Red Hat's support group, but we'll take a stab.
Download and burn the CD images. Edit "/etc/sysconfig/rhn/sources" and add a line such as:
dir local-CDs /mnt/cdrom
Put one of your burned CDs in the drive and it should automount. You can then run up2date. Since you've added a local RPM repository to its sources, it should work fine.
I'm not certain, but you might be able to force up2date to look at the CDs without editing the file by specifying the "-k /mnt/cdrom" option:
up2date -u -k /mnt/cdrom
