Back I haven't done this myself, but you could install a base machine with U2. Configure it to point to RHN. Run update -u -d (-d is download I believe) and it will store the rpms in /var. Check the man page on those args though. Then you can take those RPMS and put them on an nfs/http/ftp server and run a series of rpm freshen installs hitting the locations.
