resize "/ " under LVM 2005-10-05 - By Collins, Kevin (MindWorks)
Back Yes, I already did that as mentioned below - updated the appropriate sections of /etc/grub.conf.
I even tried creating a new VG and changed everything to point there, however after boot it is still booted off of /dev/vg00/lvol1 even though a df shows it as the new boot path.
Is there something done in the initrd image that forces it to always boot from the "original" /?

I believe the bootup process mounts root (/) given in the kernel parameters in grub/lilo. So, make sure you update that too.
