Back As I mentioned, I modified grub.conf. The LVM2 list won't really help as this is LVM1, but maybe there is an LVM1 list... I'll check that.

OK, so I think you're telling us that you created a new LV, copied all the old LV data to it, and are now wanting to boot fro the new LV.
Assumption: You modified /boot/grub/grub.conf to boot off the new LV.
For some reason, you seem to be booting off of the new LV, but a DF is reporting that the old LV is mounted?
Assumption: You cannot unmount it.
Not being an LVM expert by far, could it be vgscan is running at boot and decides it knows better than the config files you wrote?
It seems there are ways to disable a LV, but I don't want to get myself in trouble with someone I've never really used before.
Try a linux-lvm list: http://sources.redhat.com/lvm2/.
