The way I did this recently was to download the ISOs and make a yum repo
out of them. You need to add that to /etc/sysconfig/rhn/sources and
comment out the default line.
If the thing you're updating requires, say, the update 5 kernel because
there's a bad interaction with the update 6 kernel then you can just
install the older kernel once you're fully up to date.
